Sticky Chocolate Cake (Swedish Kladdkaka)
100g butter or margarine
150 ml plain flour
4 tbs cocoa powder
300 ml caster sugar
1 tsp vanilla essence
2 eggs
Grease a cake tin (24cm diameter with removable bottom).
Mix all the dry ingredients in a small bowl. Melt the butter in a saucepan. Add the dry ingredients to the melted butter, add the eggs and stir until smooth. Transfer the mixture to the tin. Bake in the middle of a 1750C pre-heated oven for 25 minutes. When ready the surface will look cooked and cake like, and the centre will be sticky.
Allow to cool and serve with lightly whipped cream.
